
I didn’t feel like eating another boring diet meal, So I made a smoked keto meatloaf on the smoker-and this one actually delivers.
This ended up being one of those things that just fits—low carb, filling, and actually tastes like real food.
No overthinking it.
What You’ll Need
- 2 lbs 80/20 ground beef
- 1 cup keto breadcrumbs
- 2 eggs
- ½ cup sugar-free ketchup (plus more for the top)
- 1 tbsp Italian seasoning
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt & pepper
How I Do It
1. Smoker at 225°
Use whatever wood you’ve got.
2. Mix everything
All in one bowl. Hands. Done.
3. Form the loaf
Put it on a tray or straight on the grates (I go grates for more flavor).
4. Smoke it – 2½ hours
Leave it alone. This isn’t a rush.
5. Add ketchup on top
Another 30 minutes to set it.
6. Pull at 160°
Let it sit 10 minutes, then slice.
What You Get
- Smoky flavor all the way through
- Slight crust on the outside
- Juicy inside
Doesn’t feel like you’re “on a diet.”

What I Use
Pitboss Smoker – This the smoker I have. I LOVE this thing!!
Pitboss thermometer So you know when its done, and not under, or overcooked.
Keto breadcrumbs – I use these all the time. It’s handy to have them around.
No sugar added ketchup – This is another one of those ingredients that are good to have on hand.
Easy Upgrades (if you want)
- Add cheese inside
- Wrap it in bacon
- Mix in jalapeños
Or just keep it simple. That’s the point.
